Halibut with Balsamic Browned Butter

If you read my blog long enough, you'll know my infatuation with Rachel Ray. Below is a take on a recipe she did on her show last week. She used Talapia, I used Halibut. Either way, it was absolutely "delish!" And....it was the first meal I have made of hers that actually took less than 30 minutes.

4 halibut fillets (or any other firm white flesh fish)
1/2 cup flour
Salt and pepper
3 tablespoons butter
1/4 cup balsamic vinegar
Olive oil

Pat the fish dry.
Season the fish with salt and pepper.
Dredge the fish with a light coating of flour and shake off any extra.
Heat 2 tablespoons olive oil in a skillet over medium-high heat.
Cook fish 4 minutes on each side or until firm and lightly brown.
Removed fish from the skillet and cover loosely with foil.
Reduce the heat to medium and add the butter to the skillet.
Brown the butter- about 2-3 minutes.
Stir in the vinegar and simmer 1-2 minutes, until reduced by half.
Pour the brown butter & vinegar over the fish.

The fish received rave reviews from the hubs and Little Man. Enjoy!!!

Ok...well I can not say that I am a huge fish fan. The only fish I grew up on was Fish sticks. So sad huh! But we are really trying hard to introduce fish into our weekly menu. I found a recipe for great fish tacos by Guy on the Food Network. It calls for Cod. Think I could do this recipe with Cod? I am timid about trying another type of fish. I know my kids eat Cod....what ya think? Does Halibut have that fishy taste?

Halibut is very mild. It's similar to Cod. If you stick with the white fish, then you should be okay. Cod might be cheaper than halibut, but not sure. We only have it b/c my parents shipped it to us from their Alaska vacation. My dad and grandparents caught tons of halibut and salmon.
