Little Man has a severe egg allergy, so I am always trying new things the "egg free" way.
Ingredients:
1 cup flour
3/4 cup milk
1 tablespoon brown sugar
2 tablespoons oil
3 teaspoons baking powder
1/4 teaspoon salt
Egg Substitute:
1 1/2 tablespoons oil
1 1/2 tablespoons water
1 teaspoon baking powder
Heat a electric griddle to 375 degrees.
Beat egg substitute ingredients together like you would an egg.
Combine the dry ingredients with a fork. Stir in the wet ingredients. Stir just until smooth.
Pour 1/4 cup batter onto hot griddle. Flip pancakes when the tops start to bubble.
Enjoy!

He looks like a happy pancake eater! :) I may have to try these out with my kids too.
He has just now started eating them. I have been making them this way for about a year, but he has refused them. I have been told that kids with an egg allergy havea natural aversion to anything containing egss. This explains why he wouldn't try ice cream or any baked goods before we realized he had the allergy.
That is very interesting! Like the body just knew it wouldn't be good.
